Two Minute Pie
Graham Cracker Pie Crust 8 oz carton sour cream small can of crushed pineapple Lg pkg of jello vanilla pudding mix Nuts (optional) Whipped cream or whipped topping
Mix sour cream, pineapple(do not drain), pudding mix and nuts (I used pecans) - mix well, pour into graham cracker crust, chill at least an hour. Add whipped cream/topping right before serving. Enjoy! This stuff is wonderful!!
PS: You can make it a little more "diet friendly" by using sugar free pudding, light sour cream, and light whipped topping.

My Mom used to make Chow Chow - I think I have her recipe somewhere ....but this one is really close. It was hot, but not so hot you couldn't eat it. Goes perfectly with beans and cornbread! (The "hot peppers" were a mixture of green chiles and jalapenos)
CHOW CHOW 6 bell peppers 6 lg. onions 1 med. head cabbage 6 to 8 green tomatoes Hot pepper to taste about a quart of ground up pepper 3 c. sugar 5 c. vinegar
Grind all ingredients and put in pan and sprinkle with salt about 1/4 cup. Put sugar, vinegar in mixture and bring to a boil. Cook 20 to 25 minutes. Pack in jars and seal.

You are welcome! One of my favorite memories is of walking in the house while she was making it and seeing her with a towel tied around her nose and mouth to keep her from breathing so many of the onion and pepper fumes. My eyes watered just going inside the house - much less being in the kitchen where she was fixing all of it! Don't know how she stood it - but she made some danged good chow chow!

And it was PERFECT with her beans and cornbread. I have her dining room table...sometimes I can picture her and PoPo sitting there.... such great memories. And she canned EVERYTHING. Some of the best Salmon I ever had her and her sister caught in California and canned it. I want to teach my daughter some of her ways....she has her first garden this year.
